Recipe: Chicken Tortilla Soup

With all these frigid temps lately, all I can think about is making hot soup! I like to experiment with soup because there are so many different things that can be 'thrown together' to make a simple dinner.

For example, last night was a hot soup night because the heat in my hubby's work van decided to give up, and he had to work overtime - so he spent a 12+ hour work day freezing. :-(  I caramelized onions, tossed in chopped carrots and garlic, leftover brown rice, and black beans and turkey from the freezer. Poured in beef broth and water, and seasoned with rosemary, thyme, oregano, salt and pepper. Ta-da! Souper easy dinner ready when my hubby got home ;-)

Sometimes I write recipes down as I go, sometimes I don't. Sometimes I make something so often without a recipe, that I have to slow down and write it as I go so I can have a recipe to share! Today's recipe is one of those...

Chicken Tortilla Soup is one of my go-to meals when having guests over. It's so easy and inexpensive to put together, and best of all it makes a huge batch so even if you have a large family, or guests over, chances are you'll have plenty for leftovers or to freeze for another meal! This is perfect for a cold snowy day, but really goes over well any time of the year. This past summer I brought a pot of this soup for a potluck our Bible study group was having. I was asked for the recipe...and so finally this Fall I wrote it down as I made it...and now I am posting it for you!

Chicken Tortilla Soup (see notes below)

12 Quart Stock Pot*
1 Tablespoon Olive Oil
3-4 Boneless Skinless Chicken Breasts (can use frozen or thawed)
1 large can (105oz) Crushed Tomatoes (I get these from Costco)
1 large can (102oz) Diced Tomatoes (I get these from Costco)
1 large can or 2 small cans Diced Green Chilies
3-4 Tablespoons Cumin (I buy in bulk from a local co-op)
1-2 Tablespoons Chili Powder
2 Pounds Dried Black Beans** (sorted, rinsed, soaked and cooked) or 6-8 cans (15oz each) Black Beans
4 Cups Water

Heat the olive oil in a large stockpot. Add chicken. Cook for 3-5 minutes on each side, until just starting to brown.*** Add crushed and diced tomatoes, diced green chilies, cumin, and chili powder. Simmer for 30 minutes. Add black beans and water and simmer 30 minutes longer, or until chicken has reached 160 degrees. Remove chicken, shred with 2 forks (or cool slightly and use your hands), and stir back into soup.

Ladle into bowls, then top with shredded cheese, sour cream, black olives, fresh chopped chives, and tortilla chips. To spice it up a bit add a dash or two of hot sauce. Enjoy! Then have seconds :-)

Alternatively, you can make this in the crockpot. Omit the olive oil, and put the remaining ingredients into the crockpot. Stir. Set on low for 6-8 hours, until chicken is fully cooked (160 degrees). Remove chicken, shred then stir back into soup.

Keeps in the refrigerator for 4-5 days. Freeze any remaining soup for another meal!

--------------------

Notes:

*I use a 12 quart stock pot for this recipe, but you could split it between two standard soup pots if you don't have a large stockpot, or cut the recipe in half to make a smaller batch. You can also make this in 2 large crockpots, or halve the recipe for 1 crockpot.

**I use dried beans that have previously been sorted, rinsed, soaked, and cooked. I normally cook beans from time-to-time and freeze them to have on hand when needed. Compared to canned, I love that they don't have salt added, and they are much cheaper to buy dried! Canned would work too though (1lb dried=3-4 cans; 2lbs dried=6-8 cans).

***To make this even easier you can omit the olive oil, stir everything into the pot, simmer 60-90 minutes (until chicken is fully cooked), shred chicken and add back to the soup. OR, if you have previously cooked/shredded chicken, use that in place of the fresh/frozen and just simmer soup for 30-45 minutes to blend flavors.

If you make this recipe - I would love to hear about it! I always encourage changing recipes up to make them your own; did you add/omit anything?

Welcome to MOPS 2013-14!

It is great to see so many new (and returning) faces at MOPS this year! Last year I was one of the new faces, and little did I know as I first walked through the doors what an impact MOPS would have on my life.

My name is Amy J, and I feel honored to be writing for the MOPS blog this year! I'm a writer at heart, and while I don't always get a lot of time to sit down and write/type at length these days (I admit, my own blog has been a bit neglected), I am always writing something in my head...or in a journal...or on a scratch paper with bunnies or ladybugs or monkeys on it. I've been praying about writing for MOPS and look forward to the challenge for the year ahead!

I'm working on a post to share my story of getting to MOPS, and how it has impacted my life. I would LOVE to hear your story too! It can be short, sweet, and simple, or it can be long and detailed <---how most of my posts will probably be ;-)   I will compile your stories to share in a future post! You can comment here, or send an email to: itsamopsthing@gmail.com  Please let me know if it's ok to use your first name, or if I should label it "anonymous".

Thanks for reading, and look for inspirational quotes, powerful scripture, funny mommy stuff, stories, recipes, etc... to come!

All Good Things Must Come to an End

All good things must come to an end and my time with MOPS is quickly coming to an end. What a joy and pleaure it has been being your Outreach/Prayer and Care coordinator. It has been so rewarding serving among such fine women. It seems just yesterday that I was where you are. A young mama with babies on my hip, spit up on my shirt, and nuks and smooshed cracker crumbs at the at the bottom of my purse. Some days seemed to go on forever but the years, the years just keep coming faster and faster. I blink and another milestone is reached and someone grows another inch.
I have been where you are and I know where you are going. When you are once again rocking your little one watching night turn into day remember it is fleeting. The soft baby sighs on your neck will turn into running tight hugs around your neck. Those fat little hands you hold will grow and match the size of your own. The cuddles and the constant need for mommy's attention will slowly be replaced with a quick hug (at your urging) and independence. It is all good. It is a joy watching your babies grow into beautiful, independent people but you will look back and wish you knew when the last rock, or last hand in hand walk in the park, or the last time you would pull that favorite story from the shelf, because one day you will miss it. So, cherish today and don't be too anxious for the next milestone because it will come and it will be great!

As I watch my first born enter into adulthood I am excited about our changing relationship. She may not need me to kiss her boo boo's but she still needs me. I don't hold her hand but I follow her now walking a few steps behind just in case she makes a wrong turn or needs a safe place to fall. Prayerfully, with my other two I will follow suit.

So today, marvel at that precious one of yours. Enjoy the moment you are in and go ahead and read that story one more time. What a neat idea God had when he created mother's.

I am sad to leave you all but I am no longer a mother of a preschooler. I know my journey will go on. God has plans in store for me and I am looking forward to see where He leads me. This has been one of the greatest experiences of my life. I will cherish my time with you until my journey on earth is finished.

God has big plans for you too! Don't be afraid to step out in faith. Be bold and indeed love as if your life depended on it.

When motherhood has moments where it is daunting and crazy remember you now have a 'big sister' who has been there and done that and she would love to take your phone call and listen as you share your heart with sympathetic understanding.

Thanks for the memories!

Women in the Word-Having Babies in Opposite World

It seems at the mention of your pregnancy for every comment about the blessing of it there are ten people warning you about all the negatives you are about to endure. Here is a great post (recommended by Joelle) by my favorite blogger. I would love to hear your thoughts on this!

Mentor Moms' Monday and a Half (It's a little late)

Life Happens

Yesterday was a very busy day for me and life was happening.  One of the things I was doing was shopping for birthday bags for homeless Anoka County teens.  It not something I would have normally thought of in my day-to-day life when life is happening with my family, but it will be something I think about now.
The birthday bags are the end of the year project for the Bible study I have been attending.  In the MOPS group, appropriately so, the focus in on young children and mothers. Mothers' hearts, can  you imagine what it would be like to be a homeless teen?  I just don't equate Anoka County with homeless teens. I do believe teens are a group in the grand scheme of charitble giving that is often overlooked.
Anyway,  if anyone would like to check out the organizaion it is called Hope4Youth. www.hope4youthmn.org.  Pray for those that are truly less fortunate.  Pray for families.  Our society so needs Jesus!
